I spent some of last week in beautiful Yorkshire - York, to be precise.

While I was there, I got thinking about Wensleydale cheese. I love the stuff, so this week's recipe is my take on cheesy jam on toast. Yes, you did read that right.

Serves four people

Ingredients

1 fruit loaf - M&S does a good one, or any other that features big sultanas, currants and lots of cinnamon

4 oz cottage cheese

2 oz grated Wensleydale cheese

2/3 oz diced strawberries

1 oz butter

1 tsp cinnamon powder

1 tsp icing sugar

Strawberry jam

Icing sugar

Black pepper

Method

1 Cut four thick slices from the fruit loaf, put them on a roasting tray and grill one side

2 Turn the slices over so the untoasted sides are on the top and mix the butter with the cinnamon powder and icing sugar

3 Paint the mixture onto the untoasted side with a pastry brush

4 Mix the cottage cheese and Wensleydale and add it to the strawberries

5 Spread the toast with your favourite strawberry jam - I like Baxters

6 Put it back under the grill to melt the butter in

7 Take the slices back out from under the grill and with a palette knife cover with the cheese and strawberry mixture. Spread carefully, ensuring all the loaf is covered so burning doesn't occur

8 Dust with icing sugar then bake in the oven at 180 degrees for 15 - 20 mins

9 Grill for the last 30 seconds

Take out the slices and cut each one in half. Sprinkle black pepper of the top, and serve with clotted cream (or low fat yoghurt) and Walkers shortbread.
