It's sweet, sticky and can be used as a starter, main supper or even a cheese course.

It's one of those dishes that's as simple as an omelette, which is a recipe for another day.

I love it when it looks like the cupboard is bare but you can still manage to rustle up an absolutely tempting mid week simple supper. It's a fresh, homemade meal which takes under 20 minutes from start to finish. It's hardly rockette salad!!

Fig and Goats cheese puff

1 sheet of ready rolled puff pastry

1 egg, beaten

100g of Scottish goats cheese

4 small figs, quartered

1 Heat the oven to 180C/fan 170C/gas 6.

2 Cut (8cm) squares (no waste!) from the pastry and put on a non-stick baking sheet.

3 Brush with egg and add pieces of goats cheese.

4 Push on two to three fig pieces.

5 Bake for 15 minutes or until puffed and golden.

6 Serve with crispy rocket and seasonal leaves
