This week there has been a lot of chat in the restaurant about posh comfort food.

If there is such a thing, then it has to be done properly. With this in mind we are sporting a few lunch specials in the restaurant, including Ramsay's ham, leek and chicken pie served in an old fashioned Ashet pie dish.

The other dish is a burger. Now if you choose to have a burger then make it properly at home and get the kids involved. They love getting their hands messy, well my 2 do anyway!

Since I have your attention fixed on making your own burgers, why not go the whole way and make your own buns too? It’s really straight forward and anything is better than those round polystyrene things that say burger bun on the packet.

 

In the hope that the sunny weather is set to continue, why not have a barbecue this weekend and serve these super tasty, moist burgers sandwiched in an excellent bun? You won’t regret it.

 

Posh burgers in homemade buns

Ok, let's get the bread sorted first.

450g of strong flour

1 sachet of dry yeast

1 tsp of salt

1 tbsp of sugar

350ml of warm water (ideally 28-32c)

Summer harvest rapeseed oil (my nod to turning an Italian bread Scottish!)

Flaky sea salt

1 Mix the yeast, sugar and warm water until dissolved.

2 Mix the flour and salt in a bowl and slowly add the yeast liquid until you have a sticky dough.

3 Use a spatula or scraper at this stage or you will have a pound of flour stuck to your hand.

4 Place the dough on a very lightly flour-dusted surface and knead for 5 minutes (nothing too strenuous).

5 Pop the dough back in the bowl and cover with cling film. Leave somewhere warm.

6 Start your burger preparation.

7 Once the dough has doubled in size, knock back by kneading until it is shiny and tight.

8 Cut the dough into 8-10 bits and roll into reasonable rounds. Remember I don't mind if it’s not perfect.

9 Place on a baking tray and allow the buns to double again then brush with oil and salt.

10 Bake at 250c for 15-20 minutes.

 

Burger

400g of Scotch beef mince

100g of specially selected Scottish pork mince

1 tbsp of tomato sauce

1 tbsp of oyster sauce

1/2 tsp of Worcester sauce

1/2 tsp of Tabasco sauce

1/2 tsp of French mustard

1 small onion and 2 garlic cloves, pureed together with a stick blender

1 Mix everything together and shape into burgers. Chill until ready to cook.

2 Cook all the way through on not too high a heat. Sprinkle with cheese near the end.

3 Serve inside a toasted homemade bun spread with mayonnaise not butter.
