I’m hoping that the recent thunderstorms clear up and we get some more fabulous sunshine so you can try this delicious recipe.

This super simple supper tastes amazing and, whether the weather is sunshine or rain, it’s perfect for cooking on the barbecue or the griddle pan.

Ideally you would want to prepare this the night before, however, if you don’t have time, 15 mins will do.

Now the pear cider is a brilliant twist, however, if you can only find normal cider then just use that.

Sticky pear & ginger pork chops

Ask your butcher for 4 good quality specially selected pork chops

4 tbsp of soy sauce

2 tbs of runny honey

1 knob of root ginger, grated

1 garlic clove, crushed

100ml of pear cider

1 Mix all of the ingredients in a bowl and submerge the chops. Cover and chill for as long as you can.

2 Cooking pork is easier than you think, 4-5 min each side, basting with the liquid all the time and 5 minutes rest. This makes all the difference, giving you a nice juicy chop rather than a dry grey pieces of meat!

3 Serve with some spiced sweet potato wedges to add a nice edge.
