A perfect pairing: Wine, by Pete Stewart

Wine and cheese go together like Scooby and Shaggy. Classic matches such as parmesan and Chianti are perfect.

Harder cheeses generally can cope with more tannic wines while saltier cheeses, especially blues, have a natural affinity with sweeter wines such as Sauternes and port.

A creamy ricotta requires a bit more thought. As we have seen from Geoff’s recipes above, the ricotta is a versatile cheese being equally at home as part of a main dish or a dessert.
