If the twinkling lights above our home in Royal Exchange Place are anything to go by, it's the season for sparkle - so it's a given that this week's cocktail will feature a Rogano Oyster Bar favourite in the shape of Champagne.

Served alone, Champagne is spectacular, but if you want to treat your guests to something extra special, the addition of gin, crème de cassis and elderflower can take your festive fizz to another level.

Simply mix together the spirits with some premium elderflower cordial for a delicate blend of light, fruity flavours and top with Champagne to ensure you impress with this year's Christmas cocktails.

Ingredients

1 oz gin

1 tbsp crème de cassis

1 tbsp elderflower cordial

Champagne

Method

Place gin, elderflower cordial and crème de cassis into a cocktail shaker

Mix well and pour into a champagne flute

Top the glass with Champagne, stir and serve
