A drink ideal for dazzling friends as you enjoy the sparkle of awards season.
Those wanting to stay straight-edged can substitute white rum for water, making the relaxing, refreshing flavour available for everyone to enjoy.
Ingredients
(makes 8 drinks)
3 pounds pineapple, peeled, cored, and cut into large chunks
2 cups white rum
6 tablespoons granulated sugar
3 tablespoons plus 2 teaspoons lime juice (from about 2 medium limes)
Ice
Method
1 Combine all ingredients in blender and process until smooth - this is best done in batches.
2 Transfer to large punch bowl and chill until serving. Garnish glasses with pineapple chunks.
