Braised shin of beef with roast parsnips

Serves 4

24 small onions, eg pickling or silverskin

Vegetable oil for frying

1 x 250g piece of streaky bacon, cut into thick lardons

200g small chestnut mushrooms

1 Spanish onion, peeled

4 cloves garlic, peeled and very finely sliced
