This week my journey to discover the web’s weirdest recipes visits the world of speed baking as I try my hand at microwaveable biscuits.

You can’t beat a freshly baked biscuit and if it come served with a cup of tea then even better. However, despite my love of freshly baked doughy treats, I often find myself in a quandary when it comes to making them as the prospect of having to spend an hour baking is usually enough to put me off.

I know that baking is supposed to be enjoyable, relaxing and even cathartic but, when your house is full of packets of biscuits, it is difficult to persuade yourself that making them from scratch will be an hour well spent!

As a result, I decide to take to the internet to see if I can find a faster way of making biscuits from scratch and it’s not long before I come across a recipe which claims to create a batch of freshly baked treats in the microwave in less than 10 minutes. The thought is a tantalising one but, if I am honest, I find it very hard to believe so I decide it’s time to put this recipe to the test.

Now, as some of you may be aware, this is not the first time that I have tried to bake something delicious using a microwave. Back in October I somehow managed, despite my apprehension, to make a surprisingly edible and shockingly tasty chocolate muffin in five minutes using this contraption, which, according to most bakers, should never be involved in the art of biscuit and cake making.

As a result, I am hopeful that this recipe should work, however, I am still apprehensive as the slightest mistake with cooking times could leave me with a collection of burnt rock-like creations rather than biscuits!

Undeterred, I begin by mixing some flour, butter, sugar and spices together in a bowl. I have chosen to use mixed spice and nutmeg, however, you can change these for cinnamon or chocolate depending on what sort of biscuits you want to make. I knead the mixture and roll it into a cylindrical shape before cutting it into biscuit sized chunks. I then place the chunks on some baking paper and put them in the microwave for two and a half minutes.

The biscuits look surprisingly good and the smell as they are cooking is fantastic.

After leaving them to cool for five minutes it’s time to give them a try and they definitely do not disappoint. They’ve got a good crunch to them and are almost the same consistency as shortbread, a perfect treat to cook up for unexpected guests or a night in front of the tv.

So it is possible to make edible biscuits from scratch in under 10 minutes. My baking prayers have been answered!

115g of plain flour

85g of softened butter

Half a teaspoon of ground mixed spice

Half a teaspoon of ground nutmeg

85g of Demerara sugar

 

1 Mix the plain flour, butter, ground mixed spice, ground nutmeg and 60g of sugar together in a bowl

2 Knead the mixture and roll it out until it forms a 6 inch cylinder

3 Roll the dough in the remaining sugar and cut it into slices

4 Place the biscuits on a piece on baking paper and microwave them for around two and a half minutes (for a 900 watt microwave) or until the top of the biscuits are dry

5 Serve
