Spring has sprung!

Or at least it did for two days… with a pleasant glimpse of what we hope is to come briefly shining down on Scotland last week.

If digging out the shorts seems a tad optimistic, you can always mark the changing of seasons subtly with a cocktail.

A green tea mojito hints to the promise of spring, but with 'tea' in the title you don't need to worry about jinxing the weather with an overtly summery drink. A refreshing twist on an old favourite, the chilled green tea adds a pleasant earthy tone.

Cheers to lighter nights!

Ingredients

1 tbsp fresh lime juice

4 mint leaves, torn

1 oz white rum

2 tsp sugar

½ a standard mug of green tea, brewed and chilled

Preparation

1 Muddle the lime juice, mint and sugar together, bruising the leaves to release the flavour

2 Place into a glass over ice

3 Pour in green tea, rum and serve
