Scotty Brand Carrot Burger by Chef Jacqueline O’Donnell

Burgers are one of Britain’s favourite things to eat but this easy recipe offers a light and healthy alternative to the traditional meat in a bun. Devised by popular Glaswegian chef and restaurateur Jacqueline O’Donnell, it is a firm favourite with her family.

The recipe uses Scotty Brand carrots, grown and packed in Scotland by Aberdeenshire farmer Philip Benzie. Philip farms the same land that was worked by his grandfather, sharing the same passion for farming, quality and strong traditions of rural stewardship. Crammed with nutrients, this recipe makes a great midweek supper for all the family and is ready in minutes.

Ingredients:

750g Scotty Brand carrots (grated)

400g chickpeas

1 small onion (chopped)

2tbsp tahini paste

1tsp ground cumin

1 egg

3 tbsp rapeseed oil

100g wholemeal breadcrumbs

Zest & juice of 1 lemon

150ml natural yoghurt

3tbsp sesame seeds

Method:

1 Pop one third of the carrot into a blender with the chickpeas, onion,

tahini, cumin, and a large tablespoon of the yoghurt. Whizz it all into a

thick paste.

2 Heat the oil and fry the remaining carrot until soft and then add

it to the paste with the egg, breadcrumbs, lemon zest, lemon juice and

sesame seeds. Season to taste.

3 Chill for ten minutes if you have time (the mixture, not you!),

then shape it into burgers.

4 Cook either on a barbecue or in a hot frying pan with a little

oil. The burgers will need about two minutes on each side.

5 Serve with flatbreads as shown in the photo, or with any type of

burger bun. Use more of the natural yoghurt as a garnish.

Sesame Flat bread

Ingredients:

200g Self Raising flour

2 tbsp sesame seeds

Pinch of salt & black pepper

150g natural yoghurt

1 tbsp milk

1 tbsp rapeseed oil

Method

1 Warm a grill to a high heat.

2 Mix all ingredients together to form a soft dough. Divide into 4

pieces and press into oval shapes about 5mm thick.

3 Place on a baking sheet, brush one side with oil & grill on high

until puffed & golden then turn over and repeat.

4 Fill the flatbread with carrot burger & salad and serve.
