Jerk Jackfruit Burger by Hendersons in Edinburgh 

HENDERSONS of Edinburgh, established in 1962, are introducing a new street food menu at their latest Holyrood Road branch. Along with their renowned salads, super juices and breakfasts, they’ll now be serving pulled jackfruit with avocado and lime slaw and lots more. As well as their daytime hours, they will now be opening evenings on Thursdays, Fridays and Saturdays and are fully licensed.

This is Hendersons’ new recipe for pulled jerk jackfruit, a plant based alternative to pulled pork:

INGREDIENTS
565g tin of jackfruit drained
100g white onions finely sliced
½ tsp ground ginger
½ tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
½ tsp ground allspice
½ tsp ground cinnamon
1 small chilli finely chopped (deseeded)
20g tomato paste
25g soft brown sugar
rapeseed oil
1 tsp salt

1 In a big pot fry all the spices and tomato puree in a little oil. Add the onions and cook until soft. 
2 Add the jackfruit and pour cold water just so it covers it all. Bring it to boil and simmer until falling apart/ pulling texture.

METHOD
For the slaw
1 small white cabbage finely sliced
50g salt
2 ripe hass avocados
1 lime juiced
     
1 In a tray mix the cabbage with the salt and let it rest for 20 minutes, that will take some of the bitterness of the cabbage away. 
2 Once the 20 minutes are over rinse the cabbage well so it’s not salty. Scoop all the avocado into a bowl and add the lime juice. 
3 Mush it all in the same bowl, add your cabbage and mix it well.
 
Assembling the burger
When assembling the burger you will need a soft vegan burger bun so you can layer your pulled jackfruit and top it off with your slaw.
