Stockan’s Orkney Beremeal Oatcakes with Roasted Cheese and Tomato Salsa

Ingredients: Serves 4
4x Stockan's Orkney Beremeal Oatcakes
150g of cheddar (we used Galloway Scottish Cheddar)
1x smoked paprika mill/shaker
Punnet baby tomatoes
Half a red onion
Herb of your choice (we used parsley, but coriander or basil would also work well)
Method:
- Lay out four Orkney Beremeal Oatcakes on a metal baking tray and top with generous slices of cheddar, enough to cover each of the oatcakes fully.
- Now sprinkle some of the smoked paprika over each one and grill on a low heat until the cheese is melted and bubbles.
- Whilst the oatcakes are on the grill, finely chop the herbs and add to a mixing bowl. The roughly chop the tomatoes and onion and add into the bowl. Mix together all the ingredients and season with salt and pepper to taste.
- Carefully remove the oatcakes from the grill and generously top with the tomato salsa mixture and enjoy!
