Stockans Orkney Beremeal Oatcakes with Roasted Cheese and Tomato Salsa

Ingredients: Serves 4

4x Stockan's Orkney Beremeal Oatcakes

150g of cheddar (we used Galloway Scottish Cheddar)

1x smoked paprika mill/shaker

Punnet baby tomatoes

Half a red onion

Herb of your choice (we used parsley, but coriander or basil would also work well)

Method:

  1. Lay out four Orkney Beremeal Oatcakes on a metal baking tray and top with generous slices of cheddar, enough to cover each of the oatcakes fully.
  2. Now sprinkle some of the smoked paprika over each one and grill on a low heat until the cheese is melted and bubbles.
  3. Whilst the oatcakes are on the grill, finely chop the herbs and add to a mixing bowl. The roughly chop the tomatoes and onion and add into the bowl. Mix together all the ingredients and season with salt and pepper to taste.
  4. Carefully remove the oatcakes from the grill and generously top with the tomato salsa mixture and enjoy!
