Raw Food Peanut Butter and Cacao Slice by Corner on the Square in Beauly

This recipe is simple, wholesome and filling! It is an easy peasy recipe for budding young bakers to either help with or make on their own. We love to use crunchy peanut butter in the recipe but you can use smooth if you prefer.

The Highlands & Islands Food & Drink Awards will be held for the thirteenth time on Friday 20 October 2017 at the Kingsmills Hotel in Inverness. With some of the best natural produce in the world, the Awards showcase the wide range of food and drink products in the region and the equally diverse profile of businesses, from internationally renowned companies to innovative producers.

Ingredients: Serves 12

Base:

1 cup almonds

1 cup dates (soaked in orange juice overnight)

3 tbsp raw cacao

Peanut Layer:

1 cup 100% natural peanut butter

80g cacao butter (roughly 1/3 of a cup)

1/3 cup of maple syrup

Chocolate top:

1/4 cup raw cacao powder

1/4 cup melted cacao butter

pinch of salt

Method:

1. To make the base, blend together all the ingredients, adding the nuts first. Press the mixture into a lined springform pan or a normal tray bake tin lined with parchment. smooth out the mixture to create a flat even base.

2. To make the peanut butter layer, melt the cacao butter and add in the maple syrup and peanut butter.  Stir the mixture until runny and all the ingredients are thoroughly combined. Pour over your base and pop into the freezer while you make your chocolate top.

3. To make the chocolate top, melt all of the ingredients in a small bowl over a pan of simmering water. Stir until everything has melted and there are no lumps. Take your cake out of the freezer and pour the chocolate mix over your cake. Tilt the cake until the melted chocolate is spread evenly over the top. Pop back in the fridge to set and then it is ready to be cut into slices and served.
