Dhokla by Horn Please in Glasgow

This is a popular starter made from fermented gram flour and yoghurt batter originating from the state of Gujarat, India. Dhokla is eaten cold and can be kept in a fridge for a quick snack. This very same dish can be served with an assortment of chutneys to really experience the different flavours.

Ingredients:

230g semolina

50g gram flour

150g yoghurt

1 tbsp ginger

2-3 green chillies

2 tbsp vegetable oil

1 tsp salt

2 tsp sugar

1 ½ tbsp fruit salt (without flavour a.k.a ENO)

1 ½ tbsp lemon dressing

½ tsp turmeric

300ml water

sesame seeds, to garnish

Method:

  1. In a pestle and mortar grind the ginger, green chillies and vegetable oil until it forms a paste.
  2. Mix the semolina, gram flour, ginger and chilli paste, yoghurt, salt, sugar, turmeric and water together. Whisk until thoroughly combined. Add a bit more water, if required to make the consistency of a batter. Let it rest for 10-20 minutes in a hot place.
  3. Now add the ENO and lemon dressing and mix until a fluffy consistency forms. Pour onto an oiled baking tray. Add the sesame seeds on top, and steam it in a pot for 20 minutes. Let it cool, cut into cubes and enjoy on its own or with your choice of a chutney.
