Swedish Christmas Meatballs by Akva in Edinburgh

On the December 13, we are celebrating St Lucia Day! It is a cherished tradition of the Boda Bars to celebrate Lucia Day every December and we want you to join. 
A common story is that St. Lucia was a young girl who was martyred, killed for her faith, in the year 304. St Lucia’s Day in now celebrated in the Nordic countries like Sweden and Finland, by dressing in a white dress with a red sash around your waist and wearing a crown of candles on your head. The day is filled with lots of great food and lots of singing!

Ingredients: Makes 40 small meatballs
1 small onion

100ml breadcrumbs

150ml Yulemust (mix of rootbeer and coca cola) 
800g minced meat (50% beef/50% pork)
100ml single cream

1 egg

1-2 tsp salt

1 tsp grounded black pepper

2 pinches of grounded cloves

Butter for frying

Method
1 Pre-heat the oven to 225˚C/Gas 8.
2 Chop the onion finely. Then fry the chopped onion until it is translucent. 
3 Next, mix the breadcrumbs and yulemust and leave the mixture to sit for 10 minutes. 
4 Mix the mince with the cream, eggs, spices and salt and pepper. Then blend in the onion and the yulumust breadcrumbs. Shape the meatballs no bigger than a £2 coin. Using wet hands makes this easier as the meat doesn’t stick to your hands. 
5 Place all the meatballs in a big oven pan with some butter and fry for approximately 15 minutes or until browned. Because this recipe makes roughly 40 meatballs, they can be cooled once cooked through and then frozen. Whenever you need them you can just defrost and warm up in frying pan. 
6 Serve them on your buffet or with a nice, creamy potato gratin.
