Frittata with wild venison chorizo by Great Glen Charcuterie in Roy Bridge. 

Wild venison is a delicious and healthy alternative to more common pork based charcuterie. Wild deer freely roam the hills in Scotland and feed on heather, grasses and wild plants. With no natural predators in Scotland, the wild deer population has to be managed by man to keep the numbers at a sustainable level to protect the environment from overgrazing. Wild Venison is high in iron, protein and essential omega 3 fatty acids, vitamin B and contains high levels of selenium and zinc.

Great Glen Charcuterie is based in the Scottish highlands where they sustainably source local wild venison to create a range of mouthwatering charcuterie products. One of the great things about Great Glen charcuterie is how versatile and convenient it is on its own when you fancy a delicious snack, or when you want to entertain guests with canapés. Chorizo adds a great amount of flavour to any dish and we love using it along with any left over vegetable to make this mouthwatering frittata.

INGREDIENTS:

SERVES: 6

dash of olive oil

1 sliced onion

2 left over potatoes

6 large free range eggs

1 venison chorizo

handful of peas

5 asparagus if in season or substitute for other vegetables

salt and pepper

METHOD:

1.Add a dash of olive oil to a frying pan on a medium heat.

2.Slice and then add the Chorizo to the pan. Fry until the chorizo starts to become crispy.

3. Then add the onion to the same pan and let them sweat on a low heat.

4. Remove from the heat and set aside.

5.Whisk up the eggs in a large bowl, then mix the other ingredients in and season well with the salt and pepper.

6.Pour the mixture into the frying pan on top of the chorizo and onions and spread everything out evenly.

7.Place the pan in a hot oven at 200ºc for 20 minutes.

This can be served warm or let it cool down to eat later. Perfect for picnics. A great accompaniment to the frittata is a nice salad of choice.
