Swedish Salmon Rösti by Akva in Edinburgh

Akva’s name is inspired by the water along Union canal and to be honest by Akvavit – the Swedish water of life that we love to drink. We have a great beer garden – when the sun is shining in Edinburgh, there really isn’t a better place to be. This is a great dish from our menu!

Ingredients: Serves 4

2 large potatoes grated

200g smoked salmon

3 springs of dill

2 spring onions

4 eggs

Salt & pepper

Pinch caraway seeds

Pinch cumin seeds

1 cucumber sliced length ways without seeds

¼ tsp mustard seeds

100ml white wine vinegar

 

Method:

1.  Bring the mustard seeds and white wine vinegar to a boil. Then pour the mixture over the cucumber and allow to chill.

2.  Blanch the grated potato in boiling water for 45seconds. Then place immediately into iced water.

3.  Drain and ring out using a clean tea towel.

4.  Add all the other ingredients into a electric mixing bowl and mix well.

5.  If the mix seems too dry, add another egg (the mixture should be wet).

6.  Using a blini pan with some added oil and fry a quarter of the mix for 2 min. Repeat for the other three and then move them to an oven tray and cook in the oven at 180 degrees for around 18-20min.

7.  To serve, place a rösti on a plate and top it with some of the pickled cucumber. Then to garnish the dish add a big spoonful of the dressed watercress. (Suggestion: Use lemon vinaigrette to dress the cress.)
