Crispy chicken wings, red chilli, ginger & lime dressing by The Duchess of Argyle in Glasgow

At the Duchess of Argyle we bring you our take on Mexican street food & with the sun splitting the skies these past few weeks when has been a better time! These chicken wings are finger liking good, washed down with an ice cold beer sounds like a great plan & can be made in under 20 minutes.

Ingredients:

1kg Chicken wings

2 beef tomatoes (Diced)

1 red onion (Diced)

1 bunch of coriander (Chopped)

3 cloves of crushed garlic (Minced)

2cm piece of ginger (Minced)

4 chillies (Sliced)

Spring onion (Sliced)

Sour cream

2 limes

 

Method:

  1. Pre-heat your oven to 180ºC.
  2. Get your chicken wings in a bowl with salt, pepper, juice of limes, chillies, garlic, coriander, mix. Cover and leave in the fridge to marinade for at least an hour or overnight for the ultimate bursts of flavour.
  3. Take the chicken and place it on a tray, pouring any juices, coriander, garlic & chilli over the chicken and place in the oven for 20 minutes.
  4. While the chicken is cooking take the tomato, ginger, garlic, red onion, coriander, chilli and mix in a bowl to make the salsa. (You can even add a shot of tequila to bring out some more flavour).
  5. Once the chicken is cooked through remove from the oven, place the wings on a plate and garnish with wedges of lime. Throw the salsa over the top with a dollop of sour cream and dig in!
