THE latest addition to Edinburgh’s burgeoning restaurant and bar scene has opened its doors.
Already a hugely popular restaurant in Glasgow, ‘Six by Nico’ on Hanover Street in Edinburgh’s New Town is the brainchild of Scottish-Italian Chef, Nico Simeone, and boasts a minimal design, starkly contrasted by grand fixtures and fittings with atmospheric mood lighting.
Pioneering a revolving culinary hub, every six weeks, Nico and his team will re-invent the wheel, serving a brand new six-course tasting-menu, each one themed upon a different place, memory or idea.

Drawing inspiration from both at home and abroad such as the docklands of Leith to the vineyards of South America, Nico and his team will combine different ingredients, flavours, and dishes, to bring memories and stories to the plate creating a brand new dining experience every six weeks.
Each new chapter will be kept a surprise and new menus will remain secret and published two weeks prior to the next theme.
‘The Chippie: Salt and Sauce Edition’ will kick-start this series of evolving concepts when doors open to the public on Friday, March 30.
The six-course tasting-menu provides a nostalgic nod to the traditional fish and chip shop showcasing the flavours for which the UK is framed for worldwide and acknowledges the infamous 'Salt and Sauce' condiment, peculiar to Edinburgh and Fife regions, where a mixture of malt vinegar and brown sauce is used to accompany chips or any meal from the local chip shop.
Dishes include chips and cheese, steak pie, sausage supper and the classic deep fried Mars Bar.

Chef Nico Simeone said: "Most people are familiar with the tastes and scents of their local chip shop and we wanted to take the idea of the everyday chippie menu and reinvent it to create a playful food experience."
Diners can book a table now for 'The Chippie', which runs from March 30t until May 13.
Open from midday, Tuesday through to Sunday, each six-course menu will be available from noon to night. The menu will be priced at £28 per person and diners will have the option to enjoy an expertly selected wine pairing for an additional £25.
Six by Nico Edinburgh has created 30 new jobs as they expanded their portfolio in Scotland. The restaurant features a modern design open kitchen on view to patrons with a live camera feed to big screens projecting images of the chefs at work.
