THE Shetland Fudge Company does a roaring trade from its shop on the pier in Lerwick and is building a strong online presence, but is doing so in the face of rising raw material and fuel prices.
"Sugar has gone up and our chocolate prices have risen 40% in the past two years," Gillian Ramsay, director of the eight- year-old business told The Herald.
This is a particular problem for a company that buys 100 kilograms of Belgian chocolate a week.
