Pop-up food, guerrilla dining - call it what you like, but there's no denying Glasgow has caught on to this informal eating trend with companies like Street Food Cartel and Smoak serving up quality comestibles at a variety of venues.
But a new company has turned the idea on its head by delineating from any distinct food genre and instead simply cooking what takes their fancy, inspired by travel, eating out at other restaurants and focussing on what's not been done before.
Glasgow-based Chompsky aims to offer diners a plethora of street food maximising on flavour while remaining in-tune with healthy eating and the unexpected. Its augural event will take the form of a Korean-themed night held at west end bar Booly Mardy's and small plates will include slow-roasted soy and chilli pork belly lettuce wraps, barbecue marinaded sirloin of swerbeef as well as potato tornado and homemade kimichi cabbage sides.
The night, Chung Fun, was born from a wish to return to the roots of east Asian street food and the venture will seek to surprise guests with some off-kilter elements. Drinks come courtesy of the venue and seek to complement food. Kim Jong Fun and Better Call Seoul are two amusingly-titled cocktails in the arsenal.
With plans to pop up in more unusual spaces in the future - disused properties, warehouses and living rooms - Chompsky aims to host two events a month punctuated with smaller ideas in-between.
Next in the pipeline is an all-American event at newly-opened Devils Deli with sweet treats coming in the form of whoopie pies, s'mores and brownies.
