WORK is due to begin this month on what will be the most northerly distillery on mainland Britain, at Dunnet in Caithness.

Husband and wife Martin and Claire Murray, the founders of Dunnet Bay Distillers, expect to have their first gin samples ready by the summer. The company has received £83,990 from Highlands and Islands Enterprise, which said the Murrays had put a huge amount of effort into developing their Rock Rose gin. Mrs Murray has been working with experts in Caithness to research local botanicals, which can be used to flavour the gin.
