This was one of my favourite dinners as a child growing up. Who doesn’t love sausages and mash!?
This is a great tea-time dish for anytime of the year! A Great British Classic dish done well!
TOAD IN THE HOLE – CARAMELISED ONIONS
Serves 6
Ingredients:
200g Eggs
200ml Milk
200 g Plain Flour
6 x peeled & sliced onions
Salt
Good Quality Pork Sausages
Vegetable oil
Knob of butter
Method:
Pre heat oven – 220c /gas mark 7
For the caramelised onions heat a knob of butter along with a small amount of oil in a medium sized pan. Add the onions, season with a small amount of salt. Cook the onions on a medium to low heat continuously stirring from time to time. They may take around an hour to completely caramelise.
Next sear of your sausages in a pan of hot oil to get a good even colour all round. Once coloured and part cooked set aside.
Mix all of your eggs, milk and flour together with a touch of salt. In an ovenproof dish you need to heat your oil to cook the Yorkshire pudding. Place in the oven until the oil is sizzling hot. Carefully place in your sausages and pour in the Yorkshire mix.
The pudding will take 25-30 minutes in the oven to rise and become crisp and golden. Serve as soon as possible: if it has to wait around too long it loses its crunchiness.
Cover with your caramelised onions and serve with a good helping of buttery mash and gravy!
