Lemon posset is one of the easiest and simplest of desserts to make but also one of the tastiest! Here I have added a selection of mixed berries and my mother in laws shortbread recipe which never fails!
Serves 6
Ingredients:
Shortbread -
225g Plain Flour
60g Self Raising Flour
120g Cornflour
120g Sugar
Pinch Salt
225g Butter - Soft
Selection of mixed berries
Posset -
850ml Double Cream
3x Lemon juice & zest
250g Sugar
(2-3 hours setting time)
Method:
Pre Heat Oven to 150c/ gas mark 2. First to make the lemon possets add all of the ingredients to a pan and bring to the boil. Ensure you whisk every now and again to allow the mix from burning. Pass the mix once boiled through a fine sieve to remove the zest then set in glasses or ramekins in the fridge. For the shortbread add all of the dry ingredients into a bowl. Add the soft butter and mix together until combined. Do not over work the mix.
Roll out the mix, cut into desired shapes and bake in the oven at 150c for 30-40mins. Allow the possets to set in the fridge for around 2 – 3 hours. Once set you can garnish them with your choice of berries and shortbread! This is a quick, simple and easy dessert for the most novice home cook.
