It’s Mother’s Day and things are getting tough at home.
If the schools are to close, it looks like the kids are going to be around our feet for a bit and will need a lot of entertaining. I started writing when my young daughter Olivia was small and I was stuck at home with not much to do. I wrote the instructions so everything was clear and she could understand them enough to do everything herself.
Not only did this keep her occupied she became interested in cooking and is now and excellent cook.
This recipe is written Easy Peasy style for your child, big or small, to cook a Mother’s Day treat for you.

CHOCOLATE PANCAKES
You will need some stuff:
weighing scales
a sieve
small bowls and a large mixing bowl
tablespoons and teaspoons
a fork
a measuring jug
a balloon whisk
some clingfilm
a non-stick frying pan
a spatula
a warm serving dish and a clean tea towel
You will need 5 ingredients:
225g self-raising flour
1 teaspoon bicarbonate of soda
a pinch of salt
1 tablespoon caster sugar
1 large egg
275ml semi-skimmed milk
some butter for frying
WASH YOUR HANDS !
Get all the stuff ready.
Weigh all the ingredients and lay them out.
Sift the flour into the large mixing bowl.
Add the bicarbonate of soda , the pinch of salt and the caster sugar and mix everything together.
Break the egg into a small bowl and whisk with a fork. Add it to the flour mixture.
Add the milk.
Use a balloon whisk to mix everything together to make a thick batter. Don’t worry if there are any lumps – keep mixing and they’ll disappear.
Cover the bowl with clingfilm, and leave it for half an hour or so.
Now you’re ready to cook:
Melt a small blob of butter in the frying pan over a medium heat.
When it starts to sizzle put 3 or 4 tablespoons of the thick batter in the frying pan, spaced well apart.
Turn down the heat and cook the Flop Flops for 3-4 minutes until lots of little bubbles appear on the surface and they start to brown underneath.
Slide the spatula underneath each Flop Flop and use the fork to carefully turn each one over .
Cooke them for another 2-3 minutes on the other side until they are golden brown.
Put the cooked Flop Flops on the warmed plate and cover them with a clean tea towel. Keep them on a warm place and cook the rest of the batter the same way.
Serve piled high with lots of chocolate sauce.
Last job …clean the kitchen. xxx
