Are your lockdown meals lacking inspiration? Do you crave restaurant style cookery?
Well, you’re in luck because supermarket Aldi has teamed up with Scottish chef Fraser Cameron – of The Globe Inn in Dumfries – to celebrate the return of its sell-out Gourmet Galloway Beef Burger, with four new expertly crafted recipes to help you "beef up" your burgers at home.
Here are his recipes:
BBQ burger:
Makes 4
Ingredients:
1 pack brioche buns
2 packs Galloway Beef burgers
1 tub of coleslaw
200ml BBQ sauce
1 pack black pepper cheese slices
1 pack of salami
1 romaine lettuce
350ml smoky whisky
Method:
Place the burgers into a container and cover with 325ml of the whisky and leave to infuse for 20 minutes. Fry the burgers on a medium heat until nicely caramelised on both sides. Place them in the oven and allow to cook through for 5 minutes. As the burgers cook, toast your buns and slice the lettuce into squares to fit nicely on the bun
Take the burgers out the oven and put a pepper cheese slice on each one and return for 2 minutes to allow the cheese to melt. As the cheese melts, make the whisky BBQ sauce by adding the remaining 25ml of whisky and the BBQ sauce together.
To assemble, spread a little BBQ sauce on both halves of each bun, then place the burger on the bottom half. Place 3 slices of salami on top of the burger and a spoon of coleslaw. Finally add the lettuce and the top of the bun and serve.
This burger works well with potato wedges.
Healthy burger
Makes 4
Ingredients:
1 pack wholemeal rolls
2 avocados
100ml olive oil
2 packs Galloway Beef burgers
1 tub sour cream
1 bunch spring onions
1 pack cherry tomatoes
Method:
Begin by making the guacamole. Take the avocado out of the skin, discard the stone then blend it in a blender with the olive oil and a little salt. Set to one side.
Fry the burgers on a medium heat until nicely caramelised on both sides. Place them in the oven and allow to cook through for 5 minutes. While the burger is cooking toast your buns, slice your spring onions and tomatoes.
To assemble the burger, spread a generous portion of guacamole on the bottom half of the bun. Place the burger on top followed by a spoon of sour cream. Sprinkle on some spring onions and tomatoes and then put on the top of the roll.
This burger works well with a lovely summer salad.
Gourmet burger
Makes 4
Ingredients:
1 pack seeded brioche buns
2 packs Galloway beef burgers
1 jar gherkins
1 jar red onion chutney
300g mayo
1 pack smoked cheddar slices
1 head romaine lettuce
Method:
Fry the burgers on a medium heat until nicely caramelised on both sides. Place them in the oven and allow to cook through for 5 minutes. While the burger is cooking toast your buns, slice your gherkins thinly and your lettuce into squares.
Add a dessert spoon of red onion chutney to the mayo and combine well. Taste and adjust to your preference.
Bring the burgers out the oven and cover each one with one slice of smoked cheese then return to the oven for 2 minutes to allow it to melt.
To assemble, spreading a generous quantity of red onion mayonnaise on each half of the buns. Place the burger on the bottom half of the bun followed by some gherkins and a square of lettuce. Place the top on and enjoy!
This burger works really well with chunky handcut chips.
Kids burger
Makes 4
Ingredients:
1 red onion
200ml tomato sauce
2 packs Galloway beef burgers
1 pack plain buns/rolls
1 pack cherry tomatoes
1 romaine lettuce
1 pack cheddar cheese slices
50 ml mayonnaise
Method:
Fry the burgers on a medium heat until nicely caramelised on both sides. Place them in the oven and allow to cook through for 5 minutes. During this time, slice the tomatoes into quarters and the lettuce into squares. You can also slice the onion thinly.
Take the top part of the roll and along one side make 8 holes with a skewer. Take 8 pieces of thinly cut onion and slide them in to make the hair. Then take the tomato sauce in a squeezy bottle or piping bag and begin to draw your “monster” face on the top of the bun. You can use a small amount of mayo to make teeth/fangs! I like to use half a tomato as a big red nose!
Take the burgers out the oven and cover with one slice of cheddar cheese and return to the oven for 2 minutes to allow it to melt.
To assemble, place a slice of lettuce on the bottom bun with some tomato pieces. Place the burger on top with a little bit of tomato sauce followed by the monster face bun.
This burger goes really well with curly fries.
