Growing up my only experience of cauliflower was boiled to a mush covered in a thick cheese sauce. This dish is far removed from those days. The charred nutty flavours are delicious and really is very simple to do.

Ingredients:

1 x large cauliflower

Tahini

Sesame seeds

Curry powder

Vegetable oil

Salt

Knob of butter

Method:

Pre-heat oven to 180c/gas mark 4.

Prepare your cauliflower into florets, cut these in half so you have a flat side.

Cover the flat side with a small amount of olive oil and then curry powder. Save a couple for raw slices.

In a large frying pan heat enough oil to cover the bottom of the pan on a medium heat, place the florets flat side down and cook gently for around 5 minutes, add a small amount of butter and place in the oven for 4-5 minutes.

For the tahini dressing, loosen it slightly by adding in a small amount of oil, add enough until it’s a drizzling consistency.

When your cauliflower is cooked, serve in a bowl, spoon over your tahini dressing, sprinkle with sesame seeds and thin slices of raw cauliflower.

A perfect side dish for any occasion.
