I noticed during the lockdown period that lots of people were having afternoon tea at home. Scones are an integral part of this.
This recipe comes from my mother in-law whom before she retired had a coffee shop where she made the scones fresh every morning. Enjoy with clotted cream and jam or lashings of salted butter.
Ingredients
450g self raising flour
85g margarine
85g caster sugar
1 tsp baking powder
2 x whole eggs (1 x for washing)
100ml milk
Method
Pre-heat oven 200c/Gas Mark 6
In a large mixing bowl, mix all of the dry ingredients together followed by the margarine until a breadcrumb mix is formed. Add your egg followed by the milk until a dough comes together. Do not over-work the mix. Remove from the bowl and turn out onto a floured surface. Roll out the mix to around 2-3cm.
Cut out with a round cutter and place on a greased baking tray. Bake for 10 mins in the oven. Once cooked allow to cool and serve with your favourite jam and cream.
