these baked spiced plums form a light dessert that is simple to prepare and cook.

The delicious vanilla cream complements them pefectly.

Plums come in many different varieties. Some are sweet and full of flavour, such as mirabelle, which is one of my real favourites. Others, such as damson, are more tart.

The fruits vary deeply in colour, from deep purple to red, yellow and green. The cloudy bloom on their skin is natural and isn't an indication of poor quality. All sweet dessert plums can be used for cooking, too.

British plums are at their best from now to October, making this the perfect time to plump for a plum.

baked spiced plums

Serves four

8 red plums

6 tbsp of passion fruit juice

½ tsp of cinnamon powder

40g of butter, diced

3 tsp of caster sugar

Vanilla cream:

200ml of double cream

1 vanilla pod

25g of icing sugar

Method

Preheat oven to 190C/gas mark 5.

Cut the plums in half and remove the stones. Place them skin side down in an ovenproof dish and drizzle with the passion fruit juice.

Next, sprinkle the cinnamon, butter and sugar on top and bake in the oven for 10 minutes.

While the plums are in the oven, prepare the vanilla cream.

Begin by lightly whipping the cream. Then, using a small sharp knife, split the vanilla pod down the centre. Use the knife to scrape out the vanilla seeds, and add to the cream along with the icing sugar. Mix gently.

Remove the plums from the oven and baste them with the cooking juices in the dish.

Place four plum halves in each bowl and spoon over some of the cooking juices.

Serve with the vanilla cream.
