As Geoff has been getting busy in the kitchen with his hollandaise sauce, I've been trawling the wine emporiums for suitable matches.

Hollandaise will clash with certain wine styles, in particular tannic reds, so I would recommend playing it safe this week with a South African Sauvignon blanc.

South Africa has a long history of producing excellent wines. They are a perfect mid-point style wise between the old world (central europe), and the new (everywhere else).

To my palate, these wines have everything, lush fruit with good acidity and a wonderful minerality. Also, the enthusiastic, forward thinking producers are creating wines that are hard to beat in terms of quality, accessibility and value for money.

Here are a few to try this weekend...Porcupine Ridge Sauvignon blanc 2010 (Sainsbury's, £7.99). This is the entry level offering from star producer Boekenhoutskloof, and it gives many more expensive bottles a run for their money. It's amazingly crisp and refreshing, and perfect with Geoff's salmon and hollandaise sauce recipe.

For a step up without breaking the bank, try the Edgebaston Sauvignon blanc 2009 (Inverarity One to One, £12.99). Weighing in at 14% ABV, this is not for the faint-hearted but David Finlayson is a wine-making genius, and the wine is superbly balanced.

And finally, if money is no object, try a bottle of Thelema Sauvignon blanc 2009 (Majestic, £16.99) from the South African heartland of quality wine production, Stellenbosch. This is world-class Sauvignon and worth every penny of the £17 asking price.
