‘Tis is the season to get together with friends, to enjoy lots of indulgent food and to enjoy a festive tipple or two…

I’ve included three recipes for my favourite festive frozen treats. They’re all very easy to make and taste delicious.

Follow my step-by-step instructions for a glassful of Christmas cheer! 

*Mulled Wine Granita – A Refreshing Iced Dessert*

Ingredients:

½ a bottle of port

½ a bottle of red wine

½ a bottle of white wine

½ a bottle of stock syrup (equal amounts of sugar and water boiled together)

½ a bottle of sparkling water

1 cinnamon stick

6 cloves

4 juniper berries

2 bay leaves

½ lemon, zest only

½ lime, zest only

½ grapefruit, zest only

Method:

  1. Pour all of the ingredients into a large pot, cover with a lid and bring to the boil. Keep boiling for 10 minutes then take it off the heat and allow to cool for two hours. Pass through a fine sieve and pour the liquid into a cling-film lined bowl or tray and place in the freezer. Every half an hour to an hour remove from the freezer and whisk to remove any ice crystals. You want to achieve a mulled wine slush puppy.

 

*Champagne Sorbet - One for the Girls*

Ingredients:

½ a bottle of champagne

½ a bottle of stock syrup (equal amounts of sugar and water boiled together)

½ lemon, zest and juice

A handful of crushed pink peppercorns, to serve

Method:

  1. Pour everything (apart from the pink peppercorns) into a cling-film lined bowl or tray and place in the freezer. Every half an hour to an hour remove from the freezer and whisk to remove any ice crystals. Serve with a sprinkling of crushed pink peppercorns.

 

*Lager and Lime Water Ice – My Favourite*

Ingredients:

2 pints of lager

¼ pint of stock syrup (equal amounts of sugar and water boiled together)

¼ pint of lime cordial

1 lime, zest and juice

Method:

  1. Pour everything (apart from the pink peppercorns) into a cling-film lined bowl or tray and place in the freezer. Every half an hour to an hour remove from the freezer and whisk to remove any ice crystals. Serve with a sprinkling of grated lime zest.
