Seared Tuna with Mojo Sauce and Chargrilled Courgette By Edinburgh School of Food and Wine for Supernature
At the time of year for stews and roasts, if you are looking for a tasty but healthy fish dish with a kick of spice, this seared tuna dish might fit the bill. It’s made using Supernature’s original and multi award-winning cold pressed rapeseed oil, which is healthier than extra virgin olive oil, and has a light, buttery taste. Alternatively, if you really want to turn up the heat, you could use their Red Hot Chilli infused oil instead, or their Lime Infused for a fresher, lighter dish.

Ingredients: Serves 2
2 tuna steaks
Supernature Rapeseed Oil
Salt and pepper
For the sauce
1 clove garlic
1 tsp cumin
1 tsp paprika
2 red pepper
1 slice of bread
Supernature Rapeseed Oil
Salt and pepper
2 courgettes
1 red chilli
½ lemon (juice only)
Mint leaves
Basil leaves
Method
1 For the Mojo sauce, chop the ingredients into small, manageable pieces, and add to a tall sided jug. Add a little oil at this stage, but not too much, then use a hand blender to make it all into a smooth paste. If too thick, add a little more oil. Season to taste and add more spice if desired.
2 Make long ribbons of courgette using a mandolin or a vegetable peeler and toss in a little oil with some finely chopped chilli, sea salt and black pepper. Chargrill each side for 2-4 minutes per side depending on thickness until seared lines form.
3 Drain on kitchen paper then add to a bowl. Toss the ribbons of courgette in the lemon juice, mint, basil and a splash of oil. Set aside.
4 Lightly oil and season the tuna. Cook each side for 30 seconds to 1 minute depending on how well done you wish your steak to be. Assemble all the ingredients on a serving plate as suggested in the picture.
