Wild Garlic & Walnut Pesto

Wild garlic is in full season now. If your out walking and can smell garlic in the air this is why. Wild garlic grows mainly near water and grows in woodland areas. It’s a versatile ingredient which many people have probably never came across – and it’s free! I’ve been out to pick some wild garlic which is close to me to show you how easy it is to use.

Serves 8 +

Ingredients –

200g wild garlic

80g grated Parmesan cheese

180g walnuts

200ml olive oil

1 tsp salt

1 x lemon zest and juice

Method –

After you have picked your wild garlic make sure you give it a thorough wash. Allow it to drain.

In a food processor add your garlic, Parmesan, walnuts, salt ,lemon zest and juice. Blend slowly gradually adding your olive oil. Continue to blend until you have a rustic consistency.

You now have a wild garlic pesto which can be used for pasta, breads or a dip. Store in a jar in the fridge. If you have made too much you can even drop some off to neighbours in these times of lockdown.
