The perfect Burns Night pudding by Stockan’s Oatcakes

Stockan’s Oatcakes are the perfect addition to any Burns Night celebration. Lovingly baked on the idyllic Orkney Islands, our Thick Orkney Oatcakes are made with coarse milled crunchy wholegrain oats, making them the perfect ingredient for this delicious Cranachan recipe. 

The ancient Scottish dish, originally called Cream Crowdie, is the traditional dessert to serve after your haggis on Burns Night. The dish is traditionally made with crowdie, a soft spreadable cheese, similar to ricotta or mascarpone, however, we choose to use double cream as it helps to make the dessert a bit lighter. The creaminess of the whipped double cream and tanginess of the raspberries makes it the perfect dish after the rich main course. 

Stockan’s Oatcakes, Scottish raspberries, Scottish whisky, and Scottish honey … this is as Scottish as puddings get! This easy, no-cook dessert, is the perfect ending to any Burns supper. It is also easy to add your personal touch to it. Use some local honey, switch to your local crowdie or add a splash of your favourite whisky you can make it exactly to your taste. 

And if you have any bairns enjoying the pudding with you then why not switch out the whisky for a spiced fruit coulis.

Ingredients: Serves 4
50g Stockan’s Thick Oatcakes, crushed
300 ml double cream
3 tbsp good quality runny honey
340g raspberries
6 tbsp of whisky

Method
1 Whip the double cream until it peaks.
2 Crush the oatcakes, we use the plastic bag and rolling pin method. Simply put the oatcakes in a sealable bag and bash the oatcakes with the rolling pin until the oatcakes have broken up into lots of little pieces. 
3 Fold in the honey, whisky and crushed oatcakes (save a few of the crushed oatcakes for the garnish).
4 Layer the cream mixture with raspberries in glass pots, starting off with a layer of raspberries and finish with a layer of cream.
5 Garnish with a few raspberries and a little of the crushed oatcakes.
