They can already reminisce on their salad days, and they're barely into their teens.

A group of Scottish school children yesterday unveiled their new culinary creation - a mango and chilli salad that will be sold in Marks and Spencer's lunchtime range.

The first year pupils at Bo'ness Academy created the salad as part of a project with Caledonian Produce, one of M&S's suppliers, and Determined to Succeed, the Scottish Government's strategy group to encourage enterprise in education.

They were challenged to create a new, healthy side salad which would appeal to M&S's younger customers.

The winning team of Gemma Angus, Louise Murray, Fraser Wilson and Ross Nimmo, were joined yesterday at an M&S store in Edinburgh's Gyle centre by Education Secretary Fiona Hyslop to launch the new range before it goes on sale across Scotland tomorrow.

Bo'ness Academy will get 10% of all the funds raised through the sale of the salad.

Ms Hyslop said the pupils' work showed the potential of Scotland's young people.

She said: "I would like to see more of these fantastic success stories."

The Fruity Fiesta Salad is priced at £1.99, and is made of rice, peppers, carrots, mangoes and sweet chilli dressing. Pupils were also involved in designing packaging and setting a reasonable price for the product.

Pupil Ross Nimmo said: "We worked very hard to come up with the salad and are really proud of the final product."
