I am not sure you even want to hear about why we need to feature a warming casserole at the end of March.

But I guess if you look out the window you will know why!

In Scotland we are prone to having winter style food rather a lot, however this still hits the mark in my home and, yes, it is really snowy outside my window.

Here is my recipe for a comforting sausage casserole. One of the recipes I really wanted to try was a cassoulet, but have no fear, I am sure there will be time for that before May no doubt!

This one can also be done in the slow cooker so you can easily come home to this  ready for you at tea time.

Hot Comforting sausage casserole

1 red onion finely chopped

2 sticks celery chopped

1 red & yellow pepper chopped

4 garlic cloves chopped

8 cooking chorizo sausage

8 pork sausages

2 tsp sweet smoked paprika

1/2tsp ground cumin

1tbsp dried thyme

150ml white wine

2 x 400gr chopped tomatoes

3 sprigs fresh thyme

1 chicken stock cube

1 tin cannellini or borlotti beans

1 bunch of chives to chop

1.      Heat rapeseed oil in a large heavy-based pan. Add the onion and cook gently for 3 minutes. Add the celery and peppers and cook for a further 2 mins.

2.      Add the sausages and fry the sausages for 5 minutes, then stir in the garlic, spices and dried thyme and continue cooking for 1  min or until the aromas are released.

3.      Pour in the wine and use a wooden spoon to remove any residue stuck to the pan. Add the tinned tomatoes, and fresh thyme and bring to a simmer. Crumble in the stock cube and stir in.

4.      Cook for 30 minutes. Stir in the beans and cook for a further five minutes. Remove the thyme sprigs, season with black pepper

5.      I served this with homemade garlic bread & a big tray of roast vegetables
