What is it: This historic and apparently haunted hotel was built for the Bishop of Sutherland. It has served as a private residence, a school, a jail and courthouse, and now a 25-bedroom hotel. It is a truly beautiful hotel full of character which has been maintained over the years. The 15th-century building has had only three owners since being converted into a hotel in 1947, though I do know it was on sale at the beginning of this year for a mere £2.25 million.

Interesting fact: Even though the whisky selection here is one of the best in the world it is probably better known for being haunted by a thief called Andrew McCornish, imprisoned and then killed for stealing ewes and rams from nearby estates. Marion Mackenzie, the daughter of his jailer, the Sheriff Substitute of Sutherland, was the first person to see Andrew's ghost at the close of the 19th century. After a few whiskies you may well see him too.

Verdict: This is one of the saviours of Highland hospitality. For such an amazing part of the world it's hard to find anything with a bit of quality. The whisky bar is run by whisky enthusiasts Simon and Phil Thompson and they do a great job in keeping the bar on top of its game.

Drink: They specialise in old discontinued and very rare bottlings and all bottles are priced and dated when opened and stored under Argon gas, which is perfect for preserving opened bottles. With over 300 to try there is something for everyone.

Food: The hotel has a great reputation for locally sourced ingredients on their menu.

Price: Food can be a bit steep but the whisky bar prices are reasonable. If you are into your whisky you can even go on their whisky safari, which for £500 offers a three-night stay, all meals plus visits to some amazing distilleries with some exclusive tastings thrown in.

Children: Not a place for kids.

Avoid if: You prefer city hang-outs.

Perfect for: Escaping city life and sampling some fantastic Highland hospitality.
