Beetroot - Green Lentils – Feta – Basil & Walnut Salad

Beetroot is a favourite of mine and this quick simple salad is really tasty and effective. I’ve used dried lentils here but alternatively use pre-cooked packet lentils which can be found in most supermarkets.

Ingredients – makes 2

4 x Cooked Beetroots

100g Green Lentils – cooked

Feta cheese

Basil pesto ( or wild garlic from previous recipe)

Fresh Basil Leaves

Walnuts

Olive oil

Method

First you will need to cook the lentils. Cook lentils as per packet instructions allowing for a ‘bite’ texture , cool in cold water and drain thoroughly.

Roughly chop your beetroots and mix through with your lentils. Spoon over your pesto, crumble your feta cheese then add your walnuts. Finish by adding a few fresh basil leaves and a dressing of olive oil.

A vibrant, fresh salad for anytime of the year!
