I WAS disappointed that the Herald articles on the Buttery failed to mention Peter and Kathleen Lamont, as they were the founders of the Shandon Buttery. The restaurant opened in the 1950s, designed by architect Walter Eason, replacing the original lounge bar. Many people thought a restaurant in Anderston would never succeed - how wrong they were.

I think Jack McLean would find the original name was Shandon Buttery, named after the butter market in Shandon Street in the north side of Cork City, which was at one time the most important butter market in western Europe. It exported lightly salted butter to England but a heavily salted variety to the Americas, to ensure preservation. I can only assume that the founder was a fellow Corkonian.
