It’s that time of year again where parsnips are now fully in season and at their best. They are one of my favourite vegetables and with the roasted ones in this recipe they would be the perfect accompaniment around the Christmas dinner table.
Ingredients:
Parsnips – Peeled & Cut
Fresh Thyme
Finely Grated Parmesan
Runny Honey
Vegetable oil/ Fat
Method:
Pre heat oven 190c/gas mark 5
For this recipe I peeled my parsnips and brought them to the boil in a pan of seasoned water, drained them and then finished them in the oven, althoughif you wish to cook them from raw that’s perfectly fine.
In a large roasting tray pour a generous amount of oil to cover the base and heat in the oven for a few minutes.
Remove the tray and lay in the parsnips with the fresh thyme sprigs.
Cook in the oven for around 20-25minutes turning occasionally.
Once cooked scatter over a good helping of grated parmesan and cook for a further minute until melted.
Finish with a big spoonful of honey drizzled over the top.
